How to Switch from Party Chat to Game Chat on PS5
Double click the PS button on your controller OR.
Click the PS button on your controller once and select “Game Base” (as shown in the picture below), click on the party you were just talking in and then select “View Voice Chat”

Press the PlayStation button and navigate to the Game Base menu. To talk to a single person, browse for the person in your friend list and press X. Select Join Voice Chat. To talk to a group, head to the Parties tab in Game Base.
